Surely the character would have to achieve a very high level of Paladin before becoming a Death Knight?

According to the Fiend Folio, the Death Knight has power over undead as a 6th level cleric, as a Paladin has cleric undead turning ability equivalent to two levels below, that would mean a minimum of 8th level Paladin before they can be fallen and punished.

I am reminded not of Gygax but Arnesson. In Blackmoore one of the early PC knights, Sir Fant was killed and came back as the vampire Sir Fang who went on to be among the top villains of the campaign, and some have argued the reason why clerics are anti-undead machines because the other PCs needed tools to stand up to him.

He was run by the same PC who had run him in life.

But that was a Braunstein style game with pvp factions. It's what people are rediscovering now.

In a modern style game with a narrative style plotline, I don't think I would allow a death knight. In an OD&D, BECMI, 1e style Braunstein, yes I would consider it, but only as the actual results of play. When it is what the narrative from Fiend Folio says: a punishment not a reward.
